This inland Algarve presents us with a rich and varied type of gastronomy based on meat dishes such as pork, poultry or lamb, sausages. In the uplands, game dishes such as hare, wild boar, rabbit and partridge are common. These can be combined with seasonal vegetables, such as broad beans, peas, chickpeas, grass peas, among others.
